Description
This dessert was specially designed to participate in the “Les Rois du Gâteau” French TV show and required several months of development.
I wanted to create a cake that reminded me of my various travels to the USA and flavors that we don’t usually find in stores.
It consists of a crispy sweet pastry, a chocolate cream, a feuillantine made with peanut praline, a salted butter caramel, a whipped peanut ganache, and finally a cocoa mirror glaze.
This dessert was a great success and was approved by renowned pastry chefs such as Cyril Lignac, Frédéric Bau, Frédéric Cassel, and Mercotte.
Although it may seem like a lot of work, it’s just a matter of spreading the preparation over 3-4 days.
